Dundee Cake

A family favourite for Christmas. Nothing instills a sense of familial well-being better than a meal prepared and eaten together at home. This Holiday, bake the Dundee Cake to add to the warmth of your holiday celebrations or simply give it as a gift. Tied with the right ribbon or wrapped in the right box, this treat is a perfect gift for anyone.

Ingredients
4 large eggs
8 oz butter
6 oz brown sugar
4 oz SR flour
4 oz plain flour Pinch of salt
1 tsp baking powder
24 oz mixed fruits
2 oz nibbed almonds
2 oz blanched almonds
1/4 cup milk
Method
1 Wash mixed fruits in cold water. Drain. Chop.
2 Cream butter and sugar until fluffy.
3 Add egg one at a time, beating continuously
4 Combine the two flours, salt and baking powder.
5 Add to butter mixture
6 Add in chopped fruits and nibbed almonds
7 Pour into a lined 9” round tin (lined with double layers of grease proof paper).
8 Arrange blanched whole almonds gently on top of cake
9 Bake at 170ºF for 1.5 – 2 hours.
